Nique's: Seafood Pasta

Yesterday, Nique was in the mood to cook dinner for the family! (how lovely). He decided to make seafood pasta (one of my favorites) with lots of fresh succulent prawns, juicy barramundi chunks, and some crabstick. The lightly browned garlic, chilli oil, coriander and lime juice gave the pasta dish a rich flavor with a hint of spiciness. It was a simple yet delicious meal which I can never have enough of it.

Nique's Signature Dish

I miss eating Nique's hokkien mee, especially those huge and fresh succulent banana prawns - yum! The spice, aroma and taste are simply delicious! It may be time consuming to prepare the dish but the effort well worth it! I'm so proud of you Nique! Hope you will cook more often in the future ;)

Special post to feature Nique's cooking experiment from Down Under in his little cosy kitchen. Impressive!

Nique's: Indian Chicken Curry

Nique's most recent cooking experiments were chicken vindaloo and chicken tikka. They are both indian curry dishes, rich in spices and flavour. Since I did not have the privilege to savour the dishes, I could only do a search on the internet about the differences between these two dishes. Vindaloo is usually a chicken or lamb curry dish mixed with potatoes and it is spicy, whereas tikka which means meat, is usually chicken cutlets in marinade (a combination of aromatic spices and yoghurt).

Nique's: Stir-fry Chicken and Bok Choy

Another post featuring Nique's successful experiment. This time it was a simple yet balanced meal - stir fry chicken and bok choy with rice. Doesn't it look mouth-watering and delicious? I could see pieces of lean chicken meat, prawns, onion, soy sauce seasoning, and vegetable from the photo. I believe it smells and tastes as good as it looks

Cream Sauce Pasta

Recently, my sister (who hardly ever cooks)attempted to cook her own meals when the canteen at her residential hall was closed down for 2 weeks. Driven by hunger, eating healthy and economically, she was motivated to try her luck in the kitchen.

She survived the cooking ordeal and the dish turned out to be edible. Though I'm sure there are rooms for improvement, I thought she did an amazing job considering that this was her maiden attempt at the residential hall.

Nique's: Coffee

A cup a day, takes your worries away.

A cup of coffee completes my breakfast and boosts my day. It is also an occasional form of indulgence after dinner. Like coffee tasting, coffee making is an art. However, unlike a connoisseur in coffee, my satisfaction for a good cup of coffee is easily attainable as long as it is aromatic and rich in texture like Nique's[photo].

Nique's: Yummylicious Seafood Pasta

This is the most yummylicious home-cooked seafood pasta with generous portions of squid, basa fillet, and mussels, stir fry with fresh mushroom,  garlic and diced tomatoes. Nique, who happened to cook seriously for the first time, has taken the challenge to prepare this lovely dish during my stay in 'The Forum'.

What a job well done! The aroma, taste, and texture of the dish were simply beautiful. One serving was certainly not enough to fill my appetite and I would love to eat this again when I'm back!
